Aunt Gola's Three Bean Salad

Ingredients

  • 1 can red beans in brine
  • 1 can channa (chickpeas) in brine
  • 1 can tomato condensed soup
  • 1 bundle of bodi (yardlong beans) OR French beans 

Seasonings

  • 1 large onion (cut in thin strips)
  • 3 cloves garlic (crushed)
  • 4-5 pimentos (chopped)
  • hot pepper (chopped finely) to taste

Vinaigrette

  • 1/2 cup white sugar
  • 1/2 cup oil
  • 1/3 cup vinegar
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp Dijon mustard
  • A few drops of lime pepper sauce (to taste) 

Method

  • Wash then chop bodi in bite side pieces
  • Bring a saucepan of water to a rolling boil for the bodi
  • Add bodi to the saucepan for 2 minutes, then drain
  • Bring a saucepan of water to a rolling boil for the channa and red beans
  • Wash channa and red beans in a colander with running water
  • Add channa and red beans to the saucepan for 1 minute, then drain
  • Mix vinaigrette ingredients together
  • In a serving dish, empty can of tomato condensed soup, add bodi, channa and red beans, seasonings and vinaigrette, toss well and cover and leave in the fridge overnight to marinate
  • Taste and adjust seasonings to one’s liking
