Aunt Gola's Three Bean Salad

Ingredients

  • 1 can Redred Beansbeans in Brinebrine
  • 1 can Channachanna (chickpeas) in Brinebrine
  • 1 can Tomatotomato condensed Soupsoup
  • 1 bundle of Bodibodi (yardlong beans) OR French beans 


Chop the following seasonings and set aside: 


Seasonings

  • 1 large onion (cut in thin stripsstrips)
  • 3 cloves crushedgarlic Garlic(crushed)
  • 4-5 pimentos (chopped)
  • Hothot pepper (chopped finelyfinely) to taste. taste


Combine these for Vinaigrette Sauce:

  • 1/2 cup white sugar
  • 1/2 cup oil
  • 1/3 cup vinegar
  • 1/2 tsp each:salt
  • salt,
  • 1/2 tsp black pepper
  • &
  • 1/2 tsp Dijon mustard.mustard
  • A few drops of lime pepper sauce (to taste) 


Method

  • Wash then Cutchop bodi in bite side pieces.pieces
  • Bring

    Dropa insaucepan Rapid boilingof water to a rolling boil for the bodi

  • Add bodi to the saucepan for 2 Minutes,minutes, then Drain.drain
  • Bring

    Havea rapidsaucepan boilingof water into a panrolling at handboil for rest of pulses…

    Wash properly boththe channa &and red beans

  • Wash channa and red beans in a colander with running water.water
  • Add

    Thenchanna pourand red beans to the pulses in the rapid boiling watersaucepan for a1 minuteminute, then drain

  • immediately!
  • Mix

    vinaigrette

    Makeingredients suretogether

  • all beans and pulses are well drained! 

  • In a serving dish ,dish, empty can of tomato condensed soup, add bodibodi, &channa pulses,and red beans, seasonings and vinaigrette, toss well and cover and leave in the fridge overnight to marinate.marinate
  • Taste and adjust seasonings to one’s liking.
