Aunt Gola's Three Bean Salad
Ingredients
- 1 can red beans in brine
- 1 can channa (chickpeas) in brine
- 1 can tomato condensed soup
- 1 bundle of bodi (yardlong beans) OR French beans
Seasonings
- 1 large onion (cut in thin strips)
- 3 cloves garlic (crushed)
- 4-5 pimentos (chopped)
- hot pepper (chopped finely) to taste
Vinaigrette
- 1/2 cup white sugar
- 1/2 cup oil
- 1/3 cup vinegar
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp Dijon mustard
- A few drops of lime pepper sauce (to taste)
Method
- Wash then chop bodi in bite side pieces
- Bring a saucepan of water to a rolling boil for the bodi
- Add bodi to the saucepan for 2 minutes, then drain
- Bring a saucepan of water to a rolling boil for the channa and red beans
- Wash channa and red beans in a colander with running water
- Add channa and red beans to the saucepan for 1 minute, then drain
- Mix vinaigrette ingredients together
- In a serving dish, empty can of tomato condensed soup, add bodi, channa and red beans, seasonings and vinaigrette, toss well and cover and leave in the fridge overnight to marinate
- Taste and adjust seasonings to one’s liking
