Pigeon peas stew
Ingredients
- 1 kg pigeon peas (frozen/dried)
- Green seasoning
- 1 onion (chopped)
- Garlic (minced)
- Chili pepper
- Celery (chopped small)
- Thyme
- Pimento pepper
- Pumpkin (sliced thinly)
- Black pepper
- Bay leaf
- 3 tbsp coconut powder
- 1 veg magi cube
- 1/2 pack magi veg soup mix
- Golden ray butter
- Water (enough to to cover peas)
Method
- Saute seasonings in some oil
- Add peas and crumble magi cube
- Add green seasoning
- Add water
- Add coconut powder
- When peas are tender, add pumpkin and veg soup mix
- Lower the heat let the peas simmer
- Add pimento and golden ray butter
- Check stew thickness (if too thick, add a bit more water)
- Continue simmering until pumpkin is tender
