Pigeon peas stew
Ingredients
- 1 kg pigeon peas (frozen/dried)
- Green seasoning
- 1 onion (chopped)
- Garlic (minced)
- Chili pepper
- Celery (chopped small)
- Thyme
- Pimento
- Pumpkin (sliced thinly)
- Black pepper
- Bay leaf
- 3 tbsp coconut powder
- 1 veg magi cube
- 1/2 pack magi veg soup mix
- Golden ray butter
- Water (enough to to cover peas)
Method
- Saute seasonings in some oil
- Add peas and crumble Maggie cube add green seasoning
Add water then coconut powder.
When peas tender add pumpkin and veg soup mix
Lower heat let simmer.
Add pimento golden ray butter and check stew thickness.
Let simmer till pumpkin is tender.
