Pigeon peas stew

Ingredients

  • 1 kg pigeon peas (frozen/dried)
  • Green seasoning
  • 1 onion (chopped)
  • Garlic (minced)
  • Chili pepper
  • Celery (chopped small)
  • Thyme
  • Pimento pepper
  • Pumpkin (sliced thinly)
  • Black pepper
  • Bay leaf
  • 3 tbsp coconut powder
  • 1 veg magi cube
  • 1/2 pack magi veg soup mix
  • Golden ray butter
  • Water (enough to to cover peas)

Method

  • Saute seasonings in some oil
  • Add peas and crumble Maggiemagi cube
  • add
  • Add green seasoning 

  • Add water
  • then
  • Add coconut powder.

  • When peas tenderare tender, add pumpkin and veg soup mix

  • Lower the heat let simmer.the

  • Add pimento and golden ray butter
  • and check
  • Check stew thickness.thickness

    Lettoo simmerthick, tilladd a bit more water)

  • Continue simmering until pumpkin is tender.
