Chicken & Mushroom Bake
Ingredients
- 50g butter
- 50g plain flour
- 300ml milk
- 300ml chicken stock
- 1 teaspoon mustard
- 250g mushrooms (sliced)
- 500g cooked chicken (sliced)
- 50g cheddar cheese
Method
Making the roux (white sauce)
- Melt butter in saucepan and take off heat
- Mix in all flour and stir well to form a smooth paste
- Add milk and stock slowly. Bring to the boil, stirring all the time until the sauce is thickened and smooth.
Everything else
- Add mustard to the saucepan. Stir in mushrooms and simmer for 2 minutes.
- Season and add cooked chicken.
- Remove pan from heat and add cheese. Pour mixture into an oven proof dish, sprinkle a like extra on top and bake for 30-40 mins
- Serve with pasta or rice.
