Chicken & Mushroom Bake

Ingredients

  • 50g butter
  • 50g plain flour
  • 300ml milk
  • 300ml chicken stock
  • 1 teaspoon mustard
  • 250g mushrooms (sliced)
  • 500g cooked chicken (sliced)
  • 50g cheddar cheese

Method

  • Heat oven to 200°C

Making the roux (white sauce)

  • Melt butter in saucepan and take off heat
  • Mix in all flour and stir well to form a smooth paste
  • Add milk and stock slowly. Bring to the boil, stirring all the time until the sauce is thickened and smooth.

Everything else

  • Add mustard to the saucepan. Stir in mushrooms and simmer for 2 minutes.
  • Season and add cooked chicken.
  • Remove pan from heat and add cheese. Pour mixture into an oven proof dish, sprinkle a like extra on top and bake for 30-40 mins
  • Serve with pasta or rice.
