Smoked Mackerel Fillets
Ingredients
- Smoked Mackerel fillets (black pepper topped or plain) lightly shredded.
- Drizzle of oil
- 1 onion chopped
- 3 cloves of crushed garlic
- Fresh chilli pepper to taste
- Finely chopped coriander and parsley
- 1/4 each of red, yellow, green sweet peppers chopped
- 1 chopped fresh tomato
- Few sprigs of chives, chopped to garnish.
- 1/2 tablespoon of light soya sauce.
Method
- On medium heat, drizzle a very little bit of oil (not too much! as fish will release its own oil) in a frying pan.
- Sauté onions, garlic, chilli till onions are soften.
- Reduce heat,
- Add fish and toss and cover and let simmer for 3 mins.
- Add coloured sweet peppers, tomatoes, coriander and parsley, cover and let simmer till sweet peppers are soften.
- Add soya sauce and chives and stir.
- Remove from heat and serve with bread or pitta or rice.
- The soya sauce acts as the “salt”, if don’t have soya don’t add any salt ! Fish is already salted and smoked.
- Oh forgot to say remove skin of fish! Before lightly shredding
